If we truly want to be authentic about Independence Day festivities, we should be celebrating today, on July 2. Technically, it was on this day in 1776 that the Declaration of Independence was first signed. What happened on July 4 was the approval by the Continental Congress on the wording of the document that had been submitted on the 2nd. And, it wasn't until August 2 that the final copy was signed!
But, since we've already got Labor Day to celebrate in August, I'm happy to leave well enough alone!
Celebrating America's independence is best done outdoors
and in the company of our friends and loved ones. I've put together this
menu of some of my favorite summer classics for the occasion. These recipes are as easy as they are delicious and healthful.
Whether you're catering an entire party, or just bringing a dish to a picnic or a potluck, these classics won't disappoint.
Wishing everyone a happy, healthy, and joyous 4th of July!
